POLENTA CASERECCIA WITH COD MOUSSE
INGREDIENTS
quantity for four people
– White Polenta Casereccia
– 500g of cod (even frozen)
– 3/4 potatoes
– 1/2 dl of milk
– 2 garlic cloves
– 2 sprigs of parsley
– 1 carrot
– 1 celery
– 1 onion
– 1 lemon
– extravergin olive oil
– salt and pepper
PREPARATION
In a pot put the potatoes to boil and cook for 30/40 min. Put the oil and diced onion, celery and carrot in a saucepan. Add the pieces of cod and the milk. Halfway through cooking, add a little parsley, salt and pepper. Drain the potatoes, peel and mash them with a potato masher. Put them in a bowl, add the cod, the sauté, two/three tablespoons of oil, salt and pepper. Pour the cream into a bowl, store in the refrigerator.

Cut out rectangles from the White Polenta Casereccia Castello and grill them in a hot oven at 220°.
Serve the polenta croutons with the cod mousse.
