FRIED POLENTA SKEWERS WITH SHRIMPS AND ZUCCHINI

INGREDIENTS
quantity for four people

– Fried polenta Cubes
– 2 zucchini
– 1 spoon of oil
– lemon juice
– 200g of royal shrimps
– 1 shot glass of brandy
– 1 clove of garlic
– salt, pepper

PREPARATION

First of all, soak the skewers in cold water. In this way you will avoid that they can, even if it rarely happens, release wood splinters into the food. Remove the carapace and intestines (black thread) from the shrimp tails. You can also remove the tails if you prefer but, in my opinion, the skewer is nicer to look at by leaving them on and prepare the marinade for the shrimp with brandy, lemon juice, oil, salt, pepper and a peeled and crushed clove of garlic. Cover with foil and let stand in the refrigerator for an hour. Wash and trim the zucchini. With the help of a mandoline cut them very thin lengthwise and toss them for a few minutes in a frying pan or on a grill. Dress them with a little oil, lemon juice and salt.
In a large skillet, pour four tablespoons of oil, arrange the shrimp and sauté over high heat for 2 minutes, then cover the skillet and cook for 2-3 minutes more. Heat the Fried Polenta cubes Castello in the pan for 4 to 5 minutes. Prepare skewers by alternating zucchini, shrimp and cubes of Polenta Fritta.
